Quick & Easy, Spicy Bulgogi Ground Turkey Recipe

Happy Meal Prep Monday fam! This super easy recipe is honestly my go-to when my time is tight and I want something fast and delicious because #hangry. I always have ground turkey stocked in my freezer and defrost it the day before or stick it in a bowl of cold water right when I get back from the gym to do a quick defrost. The spicy bulgogi marinade is homemade and super easy. I like it because you can customize it to be as spicy as you want it (extra spicy for me). My favorite thing about this dish is that you can literally add any vegetable you want to get those extra micronutrients in. I typically do bell peppers or peas but feel free to add whatever your heart desires.

I love this recipe because it goes well with rice or any kind of starch. I’ve topped a sweet potato hash with this before and I highly recommend it if you’re looking to cut out rice from your diet. You can always use quinoa too, if you’re into that. If you want to make it extra special, top it with a fried egg!

How to make the Spicy Bulgogi Marinade

In a small bowl, mix together the garlic, ginger, soy sauce, sesame oil, brown sugar, and pepper. To make it spicy, add gochujang. You can typically find this in your specialty Asian grocery store. If you can’t find it, sriracha is a good substitute. For extra spice, add in red pepper flakes!

Quick & Easy, Spicy Bulgogi Ground Turkey

Prep time: 10 mins
Cook time: 15 mins
Yield: 4 servings


  • 1 lb 93/7 lean ground turkey
  • 1/2 onion, chopped
  • 1 red bell pepper, chopped
  • 1/3 cup soy sauce
  • 2 tbsp brown sugar
  • 2 tbsp sesame oil
  • 3-4 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1 tbsp gochujang or sriracha
  • 1 tsp red pepper flakes (optional)
  • 1 bunch green onions, chopped


  1. Prepare the marinade: in a small bowl, mix together the soy sauce, brown sugar, sesame oil, garlic, ginger, gojuchang, and red pepper flakes. Set aside
  2. Heat a wok, or large skillet, to med-high heat. Add in the onion and cook until soft (about 5 mins)
  3. Add in the ground turkey and break apart in the pan. Cook until halfway
  4. Add the red bell peppers and cook until turkey is no longer pink
  5. Pour in spicy bulgogi marinade and toss to combine. Simmer until fragrant (about 5 mins)
  6. Serve over rice, or starch of choice. Top with chopped green onions
