Asian-Inspired Ground Turkey Lettuce Wraps

Guess who’s back with another Meal Prep Monday recipe to get the week started off right? It’s ya girl, Jin, coming in hot with one another one of my FAVORITE, easy, and super quick meal preps!

Okay, in all seriousness, this is actually one of my favorite meal prep recipes. You don’t have to be an expert home cook, don’t have to drop a lot of money, and you don’t need a lot of time either. If you love to cook Asian meals, you also probably have a lot of these ingredients on hand.

Asian-Inspired Ground Turkey

If you couldn’t already tell, ground turkey is something that I always have in my freezer when it comes to planning out my meals for the week. I like to keep things easy and ground turkey cooks so quickly and takes on any seasoning quite well.

This specific recipe usually comes out whenever I’m planning on trying to get leaner for the summer. Using butter lettuce makes this a low-carb friendly meal (and it adds a nice crunch!). When I have leftovers or run out of lettuce, or just don’t want to be low-carb, this recipe would taste just as good over some white jasmine rice. Make it extra special by adding a fried egg on top.

How to make Asian-Inspired Ground Turkey Lettuce Wraps

Prep time: 10 minutes
Cook time: 10 minutes
Yield: 4 servings

Ingredients:

  • 1 lb 93/7 lean ground turkey
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 1/4 cup hoisin sauce
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice wine vinegar
  • 2 tbsp Sriracha (optional)
  • 1 8oz can of water chestnuts, drained and diced
  • 2 green onions, chopped
  • Salt and Pepper to Taste
  • Olive oil
  • 1 head butter lettuce

Instructions:

  1. Heat olive oil in a medium-sized sauce pan over medium-high heat. Add ground turkey and cook until browned. Make sure to break down the larger chunks (3-5 minutes)
  2. Add in onions and cook until translucent (2-3 minutes)
  3. Stir in garlic, ginger, hoisin sauce, soy sauce, sesame oil, rice wine vinegar, and Sriracha. Cook until fragrant (1-2 minutes)
  4. Toss in water chestnuts and green onions. Cook until tender (1-2 minutes)
  5. Season with salt and pepper to taste
  6. To serve, spoon a few tablespoons into the middle of a butter lettuce leaf and enjoy!
